Unscheduled post that was supposed to be #20180723

So. I thought I had scheduled this to post, but I never actually did that step. Probably because this was what I planned/ate/cooked during the week leading up to my Step Mom’s funeral on 7/22/18. It’s hard to believe this was nearly a month ago. At this time I was trying pretty hard to keep up our usual routines and was only moderately successful, but it did help a bit.

Monday 7/16 was friends dinner, and our friends Anthony and Alanna hosted. We had a bonfire at a park and made foil packets with potatoes, cabbage, asparagus, and ground beef. Kids played, we chatted, and I briefly able to relax and reset.

Tuesday 7/17 was our last baseball practice of the season, followed by Spaghetti Speusday. Meatballs, marinara, spaghetti, and plenty of Parmesan cheese. Apple slices as an appetizer.

Wednesday 7/18 I winged the filling recipe and baked up a batch of calzones. I used Martha’s recipe for pizza dough, and divided it into 6 equal portions. I sauteed up some red, orange and yellow peppers and onions, then mixed that together with with ricotta, spinach, a few cloves of minced garlic, red pepper flakes and parmesan cheese. To assemble the calzones I put down a layer of mozzarella, topped that with the chesse-veggie-mix, put pepperoni on top of that and then sealed it up. Egg wash and more Parmesan on top, baked at 450 degrees F until fragrant, golden, and beautiful. Marinara on the side for me.

Thursday was Darian’s last baseball game of the season, and my Dad joined us in the cheering section. We were rained on the entire game, and it was a lesson in sportsmanship. After some showers to warm up, we continued the dinner tradition of Stirfry Stursday. I made our newest favorite beef, broccoli, and rice noodle dish. Topped with plenty of cilantro.

Friday was Darian’s night to cook. The 9-year-old-chef learned how to make his favorite meatloaf recipe, with boiled potatoes and green beans on the side. He also made his favorite easy dessert recipe.

I genuinely hope you managed to enjoy this bonus/late/kind of sad menu review. I have still been planning, eating, and cooking, even though I haven’t been posting about it all that much. Thanks for hanging in there with me 🙂
