I’m trying a new thing! It’s exciting! You can tell because I’m using exclamation points! The new thing is keeping the routine of planning on the weekend, keeping my post as a draft, then inserting photos along the way, BEFORE publishing. It’s new! For me! We’ll see how successful this actually is!

Monday is Friends Dinner and this week it’s not-my-night-to-cook. Our friends Toni and Marta hosted and we didn’t attend because I had a sore throat, kids had sports, and all I wanted in the world was an early bedtime. I had Darian make a box of Zatarain’s dirty rice and salad for dinner.

Tuesday after baseball practice I made linguini with marinara and meatballs, and Darian said “somebody toucha my spaghet” about 10 million times. I also grilled up a boatload of chicken, saved most of it for another meal but added some to our side dish of Caesar salad. As usual, we put parmesan cheese on everything. Our neighbor Sophie came over and played cards, which I kind of hope becomes a regular thing.

Wednesday was chicken-fajita-burrito-bowls, with cilantro-lime-rice, romaine lettuce, pico, corn, guac, sour cream, shredded cheese, and green tomatillo salsa. Topped with tortilla chips. Yard work on the side.

Thursday was once again a whirlwind of baseball! The Stirfry Stursday tradition continued with beef, rice noodles, and veggies in a pad thai inspired sauce.

Friday was once again Darian’s night to cook! The 9-year-old-chef grilled up some chicken thighs, steamed green beans, and then tossed them both together in this soy-orange-garlic-sesame sauce. It was served over rice, with Trader Joe’s Chicken Gyoza Dumplings on the side.

Throughout the week we’ll be packing up our gear, testing batteries, and making 10,000 lists to prepare for our first camping trip of the year. We’ll be leaving on Friday, and spending a few nights out at Sibley State Park with our Friends Dinner crew.
