- Monday we enjoyed a Spaghetti dinner, with meat sauce, salad, and garlic bread, made for Friends Dinner by Leo. He heroically took over the cooking for his family’s meal and did a great job!
- Tuesday is going to be fish taco bowls. Costco has a delicious Tortilla Crusted Tilapia, which we’ll serve over cilantro lime rice, topped with guac, salsas, fresh lettuce, with pickled onions and jalapenos.
- Wednesday is just going to be a quick one- I have a fresh jar of pesto and will sautee up some cauliflower, peppers, onions, and smoked sausage, then toss it all together with pasta and some other fresh herbs. I like having slightly more veggies than pasta, and adding some extra red pepper flakes before topping with grated Parmesan cheese.
- Thursday will be crockpot meatloaf. Two pounds of ground beef, one shredded zucchini (salted, left in a strainer, then squeezed out after 5 minutes), breadcrumbs, water, onion soup mix, Italian seasoning, grated garlic, and topped with ketchup. 7 hours on low in the crockpot, served with mashed potatoes, gravy, and broccoli on the side.
- Friday is stir fry, rice, and dumplings! Chicken, green beans, garlic, onions, ginger, sweet chili sauce, and soy sauce for the dudes. Mine will be the same, but sub in tofu for meat! Served with white rice, topped with some herbs and toasted sesame seeds. Trader Joe’s soup dumplings on the side.
- Saturday I’m campaigning for a dinner out date night!
- Sunday I’ll be cooking for leftovers, making big batches of stuff that reheats well for lunch. So far my list contains red lentil soup, beef stew, rice, cutting up veggies, and other salad prep.
