Happppy New Year!!! We aren’t having Friend’s Dinner after the holiday, and next week it will be my turn to host. Here’s the first week of dinners for the New Year.
Monday I have the day off! I’m treating us to takeout for dinner. We will probably get Mac’s Fish & Chips or I Heart Pho, but I’m open to other options as well.
Tuesday will be Balsamic glazed chicken (I don’t use a recipe for this, but it’s similar to this recipe with chicken thighs, plus garlic powder, onion powder, and a little dijon mustard), rice, and Brussels Sprouts.
Wednesday I’m planning on a not-really-Pad-Thai rice noodle dish, with plenty of stir-fried onion, broccoli, cabbage, and carrots. The sauce will be me dumping in a few glugs each of soy sauce, fish sauce, sweet chili sauce, and a spoonful of peanut butter. Topped with an over-easy egg and plenty of cilantro and green onions.
Thursday Meatloaf in a slow cooker, mashed potatoes, gravy, and green beans.
Friday Pasta partttttyyyy! I’ll boil a box and a half of Farfalle (bowtie pasta) in heavily salted water, then reserve some water, drain and mix in however much butter feels right. I’ll split it into three serving dishes, then stir in one sauce each with a little extra pasta water as needed:
- Red sauce with Italian Sausage, extra garlic and red pepper flakes
- Chicken and smoked sausage in Alfredo,
- A pesto cream sauce with mixed vegetables.
Caesar Salad, garlic bread, parmesan, and extra sauce on the side.
