Last week I made a whole lot of spaghetti with meat sauce, grilled some delicious skirt steak, and reheated a lot of leftovers rather than cooking new things. It was glorious.
Monday I’m making these spiced and grilled chicken thighs over rice, Caesar salad, avocado corn salad, and grilled garlic naan bread.
Tuesday will be burgers! Regular, single patty cheese burgers with lettuce, pickles, onions, and slightly-special sauce on a sesame seed bun. Fresh veggies and dip on the side.
Wednesday I’m getting curry from the deli at Double Dragon foods. It comes with tons of herbs and rice noodles, and will go perfectly with the rain that’s forecasted.
Thursday I’m a bit uninspired and will be making chicken and broccoli stir fry with rice. I’ll wing it when it comes to the sauce, and mix of Sweet Chili Sauce, soy, garlic, and sesame oil. I’ll probably pull some dumplings out of my freezer as well.
Friday we’ll have a (frozen or delivery) pizza party! At our house. Without guests. But with lots of pizza.
