Stay Home MN, March 27 to April 10 due to the pandemic COVID-19

Sunday Balsamic Chicken, rice, green beans.

Monday Meatloaf, Broccoli, mashed and fried potatoes.

Tuesday Pasta bar! Chicken alfredo, meaty red sauce, pasta spaghetti, salad.

Wednesday Fish tacos, cilantro lime slaw, avocado, pickled onions, queso fresco, soft corn tortillas

Thursday Tasty, slow cooked Korean style beef, rice noodles, broccoli

Friday Chicken wings, naan pizzas, salad.

Saturday I’m not sure what I’ll have left at this point. Probably baked fish with Old Bay, red potatoes, and spinach. Curry night! I have massaman curry paste (Mae Ploy is my favorite) that I’ll make with coconut milk, chicken thighs, a few fresh green beans, broccoli slaw, cabbage, carrots, onions, and frozen spinach. Served over rice.

At some point I really hope that I find the time/motivation/ingredients to make Greek skirt steak, naan bread, with tzatziki sauce, salad, cucumbers, tomatoes, and red onion. This week will not be when it happens.
